Variety description

Wasabi is like the horseradish's extra-hot brother. Although the two plants are not so closely related - as cruciferous plants with pungent mustard oils as their main ingredients - they do have important things in common.

Wasabi 'Matsum' enjoys a great demand that can hardly be met. For this reason, it is not uncommon to find wasabi pastes on the market that contain only horseradish instead of wasabi. Of course, they are dyed a little green so that you don't notice it until it's too late...

When cultivating wasabi, it is important to bear in mind that the perennial grows on the edge of swamps in Japan. Therefore, it should be grown in semi-shade to shade, in moist soil, with high humidity and medium temperatures. When growing in pots, fertilisation should not be neglected. The pot should also be placed on a saucer. Wasabi is not a hotspur in terms of growth. The advantage of pot cultivation is that you can better guarantee a shady location because Wasabi does not like the summer sun at all.

Everything from Wasabi 'Matsum' can be used: the leaves, flowers, shoot axis and roots. However, only from the 2nd year of growth and not more than 20% of the plant mass. Wasabi dies back in late autumn. Then cover the rootstock well with a thick layer of straw or leaves and brushwood. You can do the same with pots or put them in a cool greenhouse, shed or even garage. They should just be frost-free and relatively dry.
