Variety description

Yacon has been cultivated in the Andes for centuries. Apparently, the Incas already cultivated yacon and used the tubers. For Central Europe, however, yacon is a novelty. The composite plant is reminiscent of sunflowers, which, however, mainly run wild - the flowers, if they appear at all, are small and inconspicuous, albeit like miniature sunflowers.
Young plants of 'Yacon white' grow quickly, the foliage is large and very eye-catching. Well fed, the plant grows quickly to 2 m or a little more. In windy locations the foliage of yacon suffers, which can reduce the ornamental value of the plant.
