Variety description

t first glance, 'Yacon red' looks like a sunflower with too small flowers. Being a composite plant, yacon is also related to Helianthus or Jerusalem artichoke.
According to the meaning of "Fruits of the roots", 'Yacon rot' is primarily about the root tubers, the flowers are completely secondary. The vegetative growth is impressive, the stems hollow, the foliage large and the whole plant more or less woolly haired. The flowers appear very late and also only sporadically, around September.

So the object of desire are the tubers. These can grow very large and look quite similar to sweet potatoes - with which they have nothing in common botanically. 'Yacon red' is not hardy and is therefore uprooted at the time of the first night frosts. The tuber harvest is amazing, 10 kg per plant is not uncommon.
